BrineClear™ is a pure filtration process, which physically removes the undesired micro-organisms and leaves a clear brine. No foreign matter is left in the brine, and the brine temperature and pH remain unchanged. Most importantly, the natural chemical balance of the brine, which is very important to the individual characteristics of the cheese, is also left unaffected.
The BrineClear™ is easily connected to the existing brining system,usually as a ``kidney function``.It is, however, also possible to install the unit for continuous or batch operation where the filtered brine is led to a separate tank or bath.
The BrineClear™ is equipped with a control system ensuring that the plant can run safely and unattended during production and CIP.A production cycle is normally 20 hours followed by CIP. |
